It isn't even a "Mexican Version" of Halloween.

It is a day of ceremony and dancing, offerings placed on home alters.

The origins predate Columbus quite a bit.

El dia de los muertos Nov 2, is celebrated in Mexico by bringing food to the  cemetery the dai before and leaving it on the grave. That night, the Dead come out and partake of the spiritual essence of the food, and the following day, the family returns and has a picnic with the items left. Pan de Muerto is a sort of egg bread that is baked to resemble crossbones, and lovers exchange sugar skills with the names of their boyfriends or girlfriends written on them. In the Pan de Muerto there is usually a tiny plastic baby Jesus baked inside. The person that finds this is traditionally obliged to sponsor a holiday later on in the year. The people I know ignored this tardition, but saved the baby Jesi anyway.

This is a syncretisistic mixture of old Spanish and Mexican Aztec beliefs.
