I just had a aged newyork steak today
not really crazy about it.
has anybody here had aged beef?
to me the tenxture seemed abit off for me
and stragely I find the flavor not as rich as a fresh steak.

I seriously doubt you've ever had "fresh steak" - all beef sold in this country (and just about anywhere) is aged 5-7 days. Probably what you had is "dry aged" beef which is aged longer, typically about 21 days. The longer aged beef should be cooked less (I like mine rare) because it is more tender and has a more delicate flavor. Even hunted game is almost always aged for several days.

I always age big game (deer/elk) for about 5 days in a rented locker if it isn't cold outside, otherwise I do it in the woodshed. I don't know if it's true, but my grandfather always swore that fresh meat would give you the shits, though fresh organ meats are ok. Smaller game such as grouse, rabbit, quail, etc. I tend to age for a day or two.

my parents used hang a whole raw chicken from the ceiling for a few days and it does make a very moist fried chicken .but they had to stop, it`s hard to know when to hang it and not attract flies.
