World Cuisine: North Italian Meat Sauce (Ragu Bolognese) | Submitted By: MARBALET
     

Smoked ham, chopped onions, carrots and celery meld with finely ground beef and pork in a sauce of white wine, beef stock, tomato paste, cream and nutmeg. Sauteed chicken livers add the final flourish in this marvelous Bolognese sauce.
