There is a tradition of eating every part of a cow in Argentina, among the gauchos. Like Mongolia, cows, horses and the occasional carrot or potato were once all there was to eat.
The Indians had to get by on llamas, guanacos, vicuñas, ostriches and such before the Spanish imported cattle. There are also armadillos and some major lizards as big as four feet long.
