That's why the government tells you that you *need* to cook the meat before eating it - because they can't make sure that it's safe to eat.

Yeah, duh. They should do their job, then the meat would be safe to eat regardless of how it's cooked. This is why I choose my butcher carefully.

I am pretty sure that cooked meat has many fewer bacteria than uncooked meat, no matter how hygienic the butcher is. The important thing is that the meat be free of particular bacteria, since humans live in peace and harmony with millions of bacteria every day, along with icky microscopic critters like eyelash mites.

   In the middle east there is less emphasis on the government inspecting the meat, and more on serveing it fresh.

      When you go to the market you can look your chicken in the eye, then watch the butcher kill gut and pluck it for you. You would be uncomfortable buying a carcass that had been hanging around for a while or buying one that didn't look pretty healthy.
